I find Mogwai to be amazing to listen to while writing. I've heard mention of Godspeed You! Black Emperor, but have yet to check them out. I'd also recommend most post-rock for all writers out there. In my view, it's by far the best genre for conveying emotion and mood. Check out bands like Mogwai, Explosions in the Sky, Sigur Ros, and Yndi Halda. I didn't think that I'd wind up finding any other Post-Rock and Shoegazing enthusiasts around! Especially on an English board such as this. I always listen to Mogwai and Ef. I'm Jim Morrison, I'm Dead is one of the best songs you can listen to, as well as Auto Rock if you're working on constructing an outdoor scene or Scotland's Shame if you're working on an upsetting piece. Ef's albums are very complex, you're best off working with Give Me Beauty... Or Give Me Death! or Mourning Golden Mornings. God is an Astronaut is a very good band as well!

I've never really listened to specific music while writing, but I'll usually try to listen to music that fits the mood of whatever I'm writing. I'll definitely try some of the suggestions here!

I need to get around to listening to Ef; I think they're the one relatively major post-rock band I haven't heard yet.
